QUAN is a contemporary Chinese dining concept helmed by Chef Justin Yang.
Chef Justin’s illustrious career includes receiving the “Young Chef Award” from the Michelin Guide Chengdu 2024, the “Young Chef Award” from the Black Pearl Restaurant Guide 2026, being named in the “Forbes China Fu Chef 30,” capturing national fame as the first runner-up on the hit cooking show The Divine Dish, and leading the team to earn a Michelin star for Hokkien Cuisine in Chengdu.
Located in Central, Hong Kong, QUAN marks the brand’s debut location in the city. Guided by the brand philosophy of “Rooted in Fujian, Dialoguing with the World” and driven by a boundless journey of taste, QUAN presents Chef Justin’s unique culinary aesthetic to push the boundaries of modern Chinese dining.


From Fujian to Chengdu, Shanghai, and now Hong Kong, the unique terroirs of different regions have gradually shaped Chef Justin’s rich journey of taste. Seamlessly fusing a global perspective and modern aesthetics with local terroirs, he elevates Chinese heritage for the modern epicurean with his singular cooking style.

Joining Lai Sun Dining, he marks his Hong Kong debut at the helm of QUAN, a refined contemporary Chinese dining concept.
The concepts signify both “taking root” and “carrying forward. Chef Justin began his journey in Quanzhou, Fujian. The terroir, culture, and taste memories of his hometown formed the foundation of his understanding of ingredients and cuisine.
“QUAN” refers to Quanzhou, his ancestral land, and also evokes the source of water — symbolizing endless flow and perpetual vitality. Here, the spirit of “Fujian” represents the Chef’s identity and spiritual origin, rather than a rigid boundary of a specific cuisine.
From Fujian to Chengdu, Shanghai, and Hong Kong, the terroir and taste experiences of different regions have gradually distilled into Chef Justin’s unique culinary biography. Rooted in Quanzhou, yet unbounded in vision. The roots remain in Fujian, but his steps, vision, and culinary philosophy transcend geographical limits.
“Dialogue with the World” is not a simple “modification” of traditional Chinese cuisine, but rather a continuous pursuit of flavor elevation and breakthrough while staying grounded in one’s roots. QUAN expresses the chef’s vision of contemporary Chinese cuisine, forming its own culinary language between tradition and modernity, hometown and the world.

Drawing from the Eastern harmony of the Five Elements, QUAN grounds its culinary philosophy in five fundamental forces: Terroir, Seasonality, Precision, Heat, and Evolution. Intertwined these elements, the origin of each ingredients, shaped through chef’s interpretation, and culminate in an authentic expression of flavor.
QUAN (泉) — Chef’s hometown Quanzhou, and the source of water, symbolizing endless vitality
HUI (薈) — Where terroir and culinary experiences from different regions converge, transformed through the chef’s understanding and interpretation, crystallizing into a unique flavor biography
GUAN (館) — A contemporary space for Chinese cuisine, where guests are welcomed with hospitality and brought together by exceptional flavor
QUAN embodies Chef Justin’s ancestral roots, flavor biography, and culinary philosophy, the “Five Elements Philosophy” is his answer to contemporary Chinese cuisine: Rooted in QUAN, boundless in journey, flavor finds its own form.

As water flows, flavor finds its season. We honor timing in selecting freshness, adjusting technique to nature, preserving authentic taste.
Fine vessel is shaped, mastery finds its measure. Knife work, crafts, and culinary execution are held in perfect restraint, allowing technique to recede gracefully behind pure flavor.
The perfection of a dish lies in the mastery of the flame (wok hei). Between intensity and gentleness, we capture the aroma, texture, and soul of the dish.
